Watermelon Salad

My daughter in law and my son, went to a fancy restaurant in Tennessee for their “date night” and when they came back, they were raving about the meal. In particular, they LOVED the watermelon salad that they were served.
Watermelons are about to be out of season, so I want to share the recipe with you so you can enjoy it as well. It tastes like a bite of springtime in your mouth, so fresh, light and wonderful.

For the salad dressing,
Squeeze one lemon, and zest it as well. Put that into a blender with a handful of fresh mint and fresh basil. The recipe calls for a few tablespoons of red wine vinegar, but we used an exotic peach vinegar that we got in Knoxville at “the tree and vine” store.

Then add a couple of tablespoons of oil, and salt and pepper and one avocado. Blend it and if it is too thick, add more vinegar
For the salad, place cubes of watermelon on a plate. Add chopped tomatoes and strawberries, and whole blueberries. My daughter in law used yellow exotic tomatoes but I just used regular ones. Then add a handful of arugula on top of the fruit. Sprinkle with goat cheese and toasted pine nuts. IT IS SO YUMMY.
